How We Process Food

 
  • Lit Soul is located in a light industrial location. Our space is properly maintained to keep pests and rodents out. 
  • Our prep area includes ample counter space and a sink (see image below).
  • We clean with Mean Green and sanitize with Nisus DSV.
  • When we prep, we wear disposable vinyl food handling gloves, hair coverings and face masks.
  • When we open cans, food is immediately poured into deli containers and closed when the container is full. We do not use utensils, or other devices, to coax the food out of the container.
  • We pack in the following: 
  • We label all containers with the contents (i.e. corn, pineapple juice) and the date we pack the container (see image below).
  • We immediately put the containers into our freezer. We have one upright freezer (11 cu ft) and one chest freezer (24 cu ft)
  • We continue to pack food until both freezers are full. This is approximately 140 cans of canned goods and 120 cans of pinepapple juice. We are still figuring out how much we can fit in the chest freezer comfortably, while maintaining proper freezing. 
  • We are currently buying:
    • Pineapple juice
    • Canned beans (garbanzo, kidney, pinto, black)
    • Tomatoes - diced, stewed
    • Corn - kernel, creamed
    • Peas
    • Green beans
    • Chicken stock
    • Carrots
    • Mixed vegetables
